Lately, I am trying to switch my lifestyle by changing my diet. With that, I am trying to find recipes that can substitute veggies for rice. My food stash consists of mostly vegetables, chicken, seafood, etc. With the available ingredients in my refrigerator, I tried to come up with a simple recipe that combines chicken, shrimp and vegetables in one dish. It has my favorite veggies such as celery, mushrooms and bell pepper. I did not copy this recipe from anyone – this is my own original creation. (Naks, proud!)
It’s easy to prepare, and loaded with nutrients from the mix of vegetables in this recipe. I prepared this for my lunch tomorrow at work.
INGREDIENTS:
1/4 kg Shrimps, peeled
1/4 Chicken breast, cubed
1 Cup corn
1 Cup mushrooms
1 Green bell pepper
Celery leaves and stalk
Olive oil
Salt and pepper to taste
Oyster sauce or Liquid Seasoning
Lemon (optional)
INSTRUCTIONS:
1. In a large pan with olive oil, brown the chicken and set aside.
2. Saute onion until translucent.
3. Add the garlic and mix.
4. Add the cooked shrimps and chicken breast
5. Add the chopped bellpepper and mushrooms. Simmer for 3-5 mins or until it gets cooked.
6. Season with salt and pepper or liquid seasoning.
7. Add the celery and mix.
8. Squeeze lemon on top.
PREPARATION TIME: 15 MINS
COOKING TIME: 20 MINS
COST: Php 250 to 300
YIELD: 4 PAX
I let my mom taste it because she was hungry. She said “ang sarap naman ng lunch mo bukas, gusto ko rin ng ganito”
Deep inside “Ma, ang mahal gawin nyan. :D”
